Stonehouse Cooks Contest: Recipe 17 Corn Bread

Corn Bread
1 cup water
1 cup frozen niblet corn
2 tablespoons olive oil
2 ¼ cups white flour
1 cup corn flour
1 cup corn meal
1 jalapeno pepper chopped finely (seeded if you wish less heat)
1 cup grated cheddar cheese
1 ½ teaspoons salt
1 tablespoon sugar
2 tablespoons fresh, chopped coriander (cilantro)
2 ½ teaspoons yeast (or 2 teaspoons quick rise yeast)
Place all liquids in your bread machine pan. Add all dry on top. Make a well in the dry ingredients for the yeast and add yeast. Program machine for a 2-pound loaf, medium crust.
